Let me start off by saying as an Italian, I am very picky about my pasta and pesto. In fact, I prefer to make my own pesto and will do so in the summer. However, I have three kids and am dedicated to making life simple. This Crockpot recipe is so easy and simple. Even more than it is simple, it is delicious. That’s right, I am telling you sauce from a jar is delicious this time. I like to serve it over pasta, but you could eat it on its own or even put it over rice. My kids love this meal and will even eat the vegetables! I am not kidding you, a recipe that all three kids love and one that includes vegetables? Yes please!

Crockpot Chicken PestoCourse: DinnerDifficulty: easy
4 chicken breast
1 5.6 oz jar Barilla Pesto Classic Genovese Sauce
1 cup chopped white mushroom
1 chopped zucchini
1 chopped yellow squash
1 1/2 cup cherry tomatoes
2 tbsp extra virgin olive oil
- Place chicken in the Crockpot and cover with a layer of pesto sauce.
- Combine mushrooms, zucchini, squash and tomatoes in a bowl and mix with olive oil.
- Layer mixture on top of the chicken and pesto.
- Cook on low for 4-6 hours
- Serve by itself, over pasta or rice.
- This recipe will work with frozen chicken. Adjust time to 6 hours.
